With all the passionate writing about food Ive encountered recently, not enough folks touch on the importance of nuts, and other nutlike foods.
So many of these foods have amazing levels of antioxidants, minerals, and healthy fats, yet get no recognition in the daily diet except to be a snack or bite to nibble on.

We should, within reason, have nuts every day, and if possible with every meal.

They are a great snack, of course, but Ive found some really unique uses for them....as such:

Seared chicken breast with balsamic glaze, and crushed pistachios...Mmmm!

Cilantro Pesto, a mixture of cilantro,parmesan, pistachios, garlic, and olive oil, process til coarse, then serve with millet crackers.

Almonds, toasted and carried around for snacks in a bag sprinkled with lemon pepper.

Hazelnuts, crushed and used for a crust on flounder, and a stuffing for said flounder, made with sesame seeds, and flax seeds.

If y'all have any "nutty' ideas. lets hear em!

Don't serve those dishes to anyone with nut allergies.

I have often wondered how difficult that might be... living with that situation!

, Here Littleenki has offered these wonderful, artistic receipes.....and Shasta has to bring up the terrible thought that some can't come even close to a nut.....without fear of serious problems or even death!

Of course, that really brings in that persons own responsibility. To guard what they eat... to inform others of their situation....I know that they are careful in school cafeterias....

Pistachios grow well in places you would never expect.

Being " nut gatherers" was what sustained Indians here in the desert and low mountains.....And I agree with you Littleenki.... for those of us who can eat them.... we don't eat enough.

And what brought NUTS into your mind?

Sometimes we learn about food allergies the hard way.  Try something new and interesting, like calamari, and spend the next three days wheezing.  Then being the skeptic that I am, try it again at my daughter's birthday dinner.  The reaction was more immediate.  "But it was just a tiny piece.  I thought it would be okay."  My whiny explanation to my daughter.

Funny you ask, Linda, as Im a big fan of nuts and seeds as food. I was having the chicken breast seared, and saw those pretty shelled pistachios sitting there, and thought"lets use them tonight!"
Its a tasty dish, but yes Shasta's right, watch it you nut allergy folks, a trip to my house can be deadly!
There are so many things going on in this world that are nuts, it's only fitting that I eat more of them to acclimate!  LOL!

Also, I heard some news yesterday that made me wonder who really is nuts, anyway....;)

We do have a good market with organic nuts here in St Petersburg, and when we arent doing shows, we do that and get our nut fix by trading jewelry for them. They are way too expensive to buy outright, at about 26 dollars a pound for almonds and 33 dollars for pistachios unshelled.

The flavor of them is also very prominent, and they figure well in many recipes with veg as well, I love Haricot Verts with sliced pecans, and shallots, and in pesto pine nuts are legendary!

Another good idea, bartering, and Im sure everyone here has heard of the barter system. :D
