Smothered Pork Chops

Season chops with whatever you like.
(I use Tony's Cajun seasoning and a little salt and pepper)
Sprinkle both sides of chops with flour
In a pan with a small coating of olive oil, brown your chops, making sure there is plenty of 'substance' left in the pan.
Remove chops
add a little more olive oil and add onion & garlic
cook until onions are opaque
Add a can of cream of mushroom soup and mix well, then add a can of water.
stir rigorously, scrapping the substance to mix with the gravy.
Add the chops back into the pan and turn the chops to get gravy coating on each side
With the fire on low, cover and let simmer for thirty minutes, moving the chops occasionally so they won't stick.
Cook rice and whatever side you want. (Lisa, my wife, loves peas)...
Pretty simple.

One thing I noticed is that you use things like olive oil and garlic that are common in Portuguese cooking, and these smothered pork chops look and sound delicious. :)

One thing I noticed is that you use things like olive oil and garlic that are common in Portuguese cooking, and these smothered pork chops look and sound delicious. :)

They are and they are pretty easy to make.... 8)

I forgot that after I've added the mushroom soup, I usually liberally add Worcestershire Sauce for flavor and coloring...

I think these might be on my menu for Monday.  Just not with olive oil.  I don't olive oil, cilantro, or mangoes.  They all taste weird to me.  But I have pork chops in the freezer, and I can buy mushroom soup an Worcester sauce.

Until I met my wife Lisa, I never even tasted olive oil. But she's part Italian, Syrian and Irish, so Olive oil had to be in play! Lol
Now I don't use anything but Olive oil. It doesn't have that greasy after taste and the house doesn't stink!

Specially if it has a low acidity level, like what they call "extra virgin", with an acidity of less than 0.8%.

Besides that, it's very good for our health. :)

Olive oil is supposed to be heart healthy fat; garlic is supposed to help cleanse the blood stream; raw onion is one of the few foods that raises your good cholesterol;

I cook most everyday with all three, plus bell pepper and a lot of brown rice  8)
