Ok so I like to cook, especially now that I'm retired and have plenty of time to kill.
I've always look seafood especially Shrimp but I also like to cook Redfish!
I've never been able to replicate some of the creamy sauces that I get when I go to a restaurant, so I thought I'd give it a go.

I searched on the web and it seemed all the recipes called for 'heavy' cream and it's just something I don't normally have around my kitchen.
So I tried a recipe with just plain milk and gave it a go.

I melted a half a stick of butter in a sauce pan
added a tablespoon of minced garlic and let it simmer for about 30/40 seconds (releasing the aroma of the garlic without burning)
I then added a tablespoon of flour stirring constantly so it wouldn't burn (got the lumps out)
I then added a cup of plain milk and kept stirring (fire on low btw)
Added some Tony Chachre's cajun seasons to taste
Then I added lump crab meat (constantly stirring)...

Baked my seasoned Redfish in the oven till done
Then I spooned on the crab sauce on top....

Here is the result....Man it tasted great....hell even I was surprised at how good this came out....

Edit:....I seasoned the Redfish fillet' with Tony's seasoning & brushed the fillet' with butter/lemon/garlic sauce...baked 350 20-25 minutes..then 10 minutes on Broil for a crispy coat....

oh Sarge ..........you have made me hungry....

hubby luvs to cook also but is currently stuck on making jerky and breakfast

ya just gotta luv a guy win the kitchen  ;D

have you tried a steamer for your shrimp?

i steam most of my veggies and one day was lazy and dumped in some shrimp..
my steamer has several sections so you can do more than one thing
worked well but you can't let them in there for very long

No I haven't but sounds interesting....

Tomorrow night it's fillet' mignon with shrimp skewers!

Wife went a picked up a whole roasted chicken.

So I de-boned it and we'll have chicken sandwich's in pistolets!....

Since according to some all I do is post about food..  ::) (working on John's Moon cd's btw)
Here is what I did tonight.  8)

Ok so I said Filet Mignon and Shrimp Skewers but the pack of shrimp i took out were 20 count and too small for skewers so I'm trying something different.

First, season shrimp with Tony's cajun seasonings.


coat with Sirarcha sauce


saute' mushrooms and onions in half stick of butter


Season Filet's with salt & pepper only and a light coat of olive oil for crisping


Grill to taste


Viola'

Looks great, but I don't like shrimp.

My culinary works are mostly white rice, spaghetti and microwave omelets.  :D
